When using the knife sharpener on your knives for the first time;
Start with Stage 1 – Precision Grinding.
STAGE 1 – Precision Grinding
Begins sharpening and creates a precision angled edge. Slowly draw the knife towards you through
both blade guide slots in Stage 1 (Fig 1) three times, alternating passes between the two slots. The
knife's cutting edge should be kept parallel with the table or counter top, except when sharpening
the tip of the blade.
To sharpen the tip, lift up on the knife handle slightly as the curved portion of the blade is drawn
through the blade guides. When drawing the knife through the blade guides, allow approximately
one second for each two inches of blade. For example, if sharpening a knife with a 6 inch blade, you
should take approximately three seconds for each pass.
Increase the duration of the grinding
movements with longer blades or lower it for shorter blades
Only a slight downward pressure is needed when you pull the knife towards you.
If your knife is not very blunt, you will find that approximately 5x sharpening movements, alternating
in the left and right slots of phase 1, are sufficient to create a sharp cut on the blade. However, if
your knife is very blunt, you will find that 10 or more alternate sharpening movements in the left and
right slots of phase 1 are required to sharpen the knife again sharply. Always move the knife in phase
1 towards you. Never push the blade away from you while using phase 1.
Before you close phase 1, it is important to check whether there is a small burr on one side of the
blade. If your last grinding movement took place in the right slot, there must be a small burr on the
right side of the cut. (see figure 2) If there is no burr present, make one more pair of grinding
movements and then check again for a burr. Repeat grinding movements, alternately in the left and
right slots, until you create a small burr along the cut. (Sometimes it is easier to make the burr if you
move the knife towards you more slowly). If a burr is along the cut, you are only ready to legislate
and polish in phase 2.
